Crispy corn fritters

These corn fritters are the crispiest little babies ever! They are are honestly so delicious... the key to making them crispy is using fresh/raw corn kernels! You can have them on their own or pair them with some oozy poached eggs for a hearty brunch meal. I’m having them with some avocado dip & fresh coriander on top. For all of the non coriander fans out there... you can sub this for another fresh herb like parsley, mint or basil. Enjoy crunching into this crispy goodness x

Crispy corn fritters recipe

Serves 4-6

Time: 25-30 minutes
 

What you need:
 
2 cups raw corn kernels

1/2 cup coriander or fresh herb of your choice (parsley/mint/basil)

1/4 cup spring onions

1/2 cup plain flour

1/2 teaspoon baking soda

2 eggs, whisked

3 tablespoons milk (or water)

1 tablespoon extra virgin olive oil

1/2 cup grated parmesan cheese (or you can use cheddar/other variety)

Salt & pepper to taste

How to:

Mix all ingredients together to make your batter. Heat a large frying pan on medium heat with a little extra virgin olive oil. Place 1-2 tablespoons of the mixture into the pan & flatten with a spatula.*TIP* spray your spatula with some cooking oil to prevent it from sticking to the batter. Repeat this for each fritter, I would recommend maximum around 4 fritters in your pan at one time to prevent overcrowding. Cook for ~3-4 minutes on each side until golden.
