Apple & Walnut Salad

SAVE this recipe for this FRESH and DELISH apple & walnut salad. If you thought salads were boring then you need to try this version! You don’t want to miss out on this drool-worthy combo. It’s loaded with fibre & healthy fats, and I have to admit I stole this recipe from my mother-in-law…. so I definitely can’t claim it! Enjoy, Cassie x


Apple & Walnut Salad

Serves 2

1 apple, halved and sliced

1/4 cup walnuts, roughly chopped

2-3 cups baby spinach leaves

1/2 red capsicum, finely diced

1/2 firm avocado, diced

2 rashers bacon, finely diced

1 tablespoon maple syrup

Dressing: 1 tablespoon each of honey, wholegrain mustard, olive oil and white wine vinegar

Prepare and cut up all of the salad ingredients. Meanwhile, heat a small fry pan and cook the bacon with the maple syrup until crispy, set aside. Make the dressing by combining all dressing ingredients and mixing well. Put everything together in a large serving bowl and drizzle over the dressing.
