Avocado and lime salsa

Avocado and lime is a match made in heaven. Here’s the salsa recipe from last night and trust me you want to save this one... it’s both refreshing and delicious! Serve this salsa with your favourite lean protein and some healthy grains eg. a wholegrain wrap! Perfect for those warm balmy summer nights coming up.

Avocado and lime salsa

Serves: 4

Time: 10 minutes

What you need: 1 avocado, finely diced 1/2 red onion, finely diced 1 red capsicum, finely diced 1 long green chilli, finely sliced 1 mango, diced 1 lime juice and zest 1/4 cup parsley, finely chopped 1 tablespoon extra virgin olive Chilli salt to taste

How to: Prepare all veggie ingredients and place in a large bowl. In a jar, shake up the lime juice, zest, extra virgin olive oil and chilli salt. Drizzle dressing over the salsa and mix to combine. Serve with your favourite sides!
