Banana, PB and oat muffins

Banana, PB and oat muffins recipe

Makes 12 muffins

Time: 35 minutes

What you need: 3 ripe bananas, mashed 2 tablespoons peanut butter - I use @mayversfood skin on PB 1/3 cup extra virgin olive 1 cup traditional oats (plus extra for sprinkling on top) 1 egg, whisked 3/4 cup milk of your choice 1 teaspoon vanilla bean paste 1 and 1/4 cup plain flour 1/2 cup brown sugar 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon cinnamon powder Shake of sea salt How to: preheat your oven to 180 degrees fan forced and spray a 12 cup muffin tray with cooking spray. In a large bowl, mash the bananas with a fork. Add the wet ingredients; egg, milk, vanilla bean paste, peanut butter, brown sugar and extra virgin olive oil and mix to combine. Now add the dry ingredients; plain flour, oats, baking powder, baking soda, cinnamon and sea salt and mix to combine. Divide batter amongst the muffin tray and sprinkle with some extra oats on top. Bake for 20-25 minutes or until cooked through. Transfer to a wire rack to cool. Enjoy a warm muffin with your cuppa. #bakingmuffins #bananamuffins
