Eggplant Dip

For the dip lovers, here’s a new seasonal recipe for you to enjoy! This dreamy eggplant dip is so delicious and super easy to whip up. It packs a smoky and garlicky punch in flavour 🔥 dip with veggie sticks, crackers or use as a spread in wrap and sandwiches. I also love pairing this dip with meat as a tasty condiment!

My tip: use a good quality local extra virgin olive oil and fresh Australian garlic to let the flavour of the roasted eggplants sing!

Eggplant Dip

2 large eggplants

4 cloves garlic, crushed

1/4 cup extra virgin olive oil

Pinch of salt

Preheat your oven to 200 degrees fan forced and line a baking tray with foil. Wash the eggplants and pierce with a fork in multiple sections of the skin. Roast for 35-40 minutes (turning every 10 minutes). Remove from the oven and let cool slightly. Carefully remove the eggplant skin and chop/mash the flesh. Add the crushed garlic, olive oil and salt. Refrigerate for at least 2 hours before serving.
