Mango salsa

It's MANGO season! Has anyone else been loving fresh mangos lately?! I definitely have!! This is my favourite mango salsa recipe which is so easy to make and just pops with flavour and colour. I love adding this salsa to tacos or wraps, as a side to fresh seafood or baked fish. But it could really pair well with anything that your wanting to add some freshness too! Mango Salsa Recipe

Serves 4 as a side

Time: 10 minutes

What you need: 1 mango, finely diced 1/2 red onion, finely diced 1 punnet baby roma tomatoes, finely diced 1 avocado, finely diced 1/2 bunch coriander, chopped (or you could use mint or parsley for non coriander people) 1 tablespoon extra virgin olive oil - I used @cobramestate coriander and chilli infused 1 lime, juiced Salt to taste Optional: chilli flakes

How to:

Chop up all salsa ingredients and place in a medium bowl. Make the dressing in a jar by combining lime juice, extra virgin olive oil, salt and chilli flakes and shake well to combine. Pour dressing over salsa and mix well to combine. Serve with some extra fresh wedges of lime.
