Prawn tacos with mango and avo salsa

Coming in hot for your taco Tuesday! These prawn tacos are such a fresh and delicious dinner that are perfect for the warmer weather! Serve these with some chipotle sauce and extra fresh lime. Happy Tuesday guys x

Prawn tacos with mango and avo salsa recipe

Serves 4 Time: 25-30 minutes

What you need: ~500g raw prawns, tails removed

1 avocado, finely diced 1 mango, finely diced 1 small red onion, finely diced 1 red capsicum, finely diced 1 long green chilli, finely diced 1/2 bunch fresh parsley, chopped 1 lime, zest & juice 1 tablespoon extra virgin olive 8 corn tortillas, heated up Optional: 2 tablespoons chipotle sauce and extra lime wedges to serve

Homemade taco seasoning: 1 tablespoon cumin 1 tablespoon smoked paprika 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon oregano 1/2 teaspoon chilli powder (optional) Salt & pepper to taste

How to: make the mango and avo salsa by preparing the veggie ingredients and combining these together in a medium bowl with the lime zest and juice, extra virgin olive oil and green chilli (if you like it hot 🔥). In another medium bowl, combine the prawns with the homemade taco seasoning. Heat a large frying pan on medium heat with some extra virgin olive oil and cook prawns for around 4-5 minutes each side or until cooked through, set aside. Warm up the corn tortillas and divide amongst plates. Serve the mango and avocado salsa, cooked prawns and chipotle sauce all wrapped up in a corn tortilla. Serve with some extra lime wedges on the side.
