Ricotta & Roast Tomato Toast
Does anyone else love toast? I’m obsessed with these ricotta and roast tomato toasts right now! They are so DREAMY and DELICIOUS! If you want to up your toast game, give these a try.
Roast some cherry or mini roma tomatoes with a good glug of extra virgin olive oil, garlic, chilli, salt and pepper on 180 degrees for 45 minutes. Top your toasts with some ricotta cheese, then add the roasted tomatoes, extra cracked pepper and some fresh herbs. I used basil leaves because I love them on just about everything. You can store these tomatoes in an airtight container with all the juices for the next few days to continue enjoying.
