Spinach and basil pesto

Want an extra lush, vibrant green and delicious pesto? Well then you need to make this one! It’s made with spinach and basil and is full of bold flavour. I find that using good quality ingredients is so important when making pesto. I always use Combram Estate light extra virgin olive oil and I love getting my fresh herbs from our local fresh fruit and veg grocer. I’m also in the process of trying to grow my own little herb garden... wish me luck because I don’t have a green thumb. Enjoy this pesto as a dip, on toast, as a pasta sauce or on whatever you like 💚

Spinach and basil pesto recipe

This makes ~1 cup of pesto

Time: 10 minutes

What you need: 1 cup basil leaves 1 cup spinach leaves 1/2 cup extra virgin olive oil 1/2 cup parmesan cheese 1/4 cup pine nuts 3 cloves of garlic Salt & pepper to taste

How to: Put all of the ingredients into a blender or food processor and blend until smooth, yet still chunky with a bit of texture (I did 3 big blitzes).  Use a spoon to scrape down the sides and give it a good stir. Portion out into little jars or containers and freeze the left overs that you won’t use in the next few days.
