Spring Quinoa Salad

The sunshine is out and things are starting to look a little brighter for us Melbournian’s. This fresh and nutritious salad is perfect for those warmer evenings when you just want something light. Pair with your favourite protein for a complete balanced meal. Hope you enjoy!

Spring Quinoa Salad

Serves 4

1 cup cooked quinoa

1 large cucumber, diced

1 punnet cherry tomatoes, quartered

1/2 red onion, finely diced

1/4 cup fresh mint leaves

Seeds of 1 pomegranate

Juice of 1 lemon

3 table extra virgin olive oil

Place all of the prepared and chopped salad ingredients into a large bowl and mix to combine. Drizzle with olive oil and lemon juice and toss. Season with salt and pepper to your liking. Serve with your favourite protein and enjoy.
