Healthy Zucchini Slice
Tasty, high protein and packed with veg. This zucchini slice recipe is an easy, healthy breaky or lunch that I could eat on repeat 5 days a week! Not only does it taste delicious, it’s packed with fibre from the veggies and wholegrain flour, plus protein from the eggs, cheese and bacon. The crispy golden top and edges are my fave!
It’s perfect for busy mums, kids lunchboxes or the corporate girlies wanting to hit their protein and fibre goals. I actually made this for my friend postpartum as a quick and easy grabbable snack that she can enjoy whilst she’s busy in the newborn love bubble.

Recipe:
2 x zucchinis, grated
1 x large carrot, grated
1 x brown onion, diced
3 x rashers bacon, diced
5-6 large eggs
1/2 cup extra virgin olive oil
1/2 cup grated cheese (tasty or parmesan)
1/2 cup self raising flour
Handful freshly chopped chives or parsley
Sprinkle salt and pepper
Whisk the eggs and season with salt and pepper. In a small pan, sauté the onion and bacon in a drizzle of olive oil until cooked. Meanwhile, grate the zucchini and carrot. In a large mixing bowl, add the grated zucchini and carrot, cooked onion and bacon, eggs, olive oil, cheese, self raising flour and chives. Add an extra sprinkle of salt and pepper then mix well to combine. Line a baking dish with baking paper and pour slice batter into dish. Bake on 180 degrees fan forced for 35-40 minutes or until golden on top and cooked through. Enjoy hot or cold!
