Summer Falafel Quinoa Salad
Serves 4
1 cup white quinoa, cooked
1 cucumber, chopped
1 red capsicum, diced
1/2 red onion, finely diced
1 avocado, chopped
8 falafels
1/4-1/2 cup feta cheese
Dressing: 1/2 lemon juiced, 1 tbs olive oil, 1/4 cup Greek yoghurt and 2 tbs finely sliced mint leaves 🍋
For a vegan option omit the feta cheese and use tahini in the dressing instead of Greek yoghurt.
