Chia seeds are tiny little things but they pack a punch when it comes to nutritional benefits! They are a great source of calcium, magnesium and dietary fibre which helps to nourish our healthy gut bacteria and boosts our glow from within. I love these little gems in a pudding, but they are also delicious just sprinkled on top of your brekkie/yoghurt. This chia seed pudding is such a comfort food! Making a nourishing and delicious brekkie or healthy snack option too.
Chia seed pudding recipe
Serves 4-6
Time: 10 minutes plus refrigeration
What you need:
1/4 cup plus 1 tablespoon chia seeds (I used white & black variety)
1 cup of milk of your choice
1 cup of Greek yoghurt
2 tablespoons of honey or pure maple syrup
1 teaspoon of vanilla bean paste or essence
1/2 teaspoon cinnamon
How to:
In a medium bowl, mix all of the ingredients together until well combined. Cover the top and put into the fridge for at least 2 hours or preferably overnight (this allows it to set nice and firmly like a pudding). Serve with your favourite toppings... fresh fruit, nuts and an extra drizzle of honey or maple syrup are my favourites!
