So I’ve been slightly obsessed with radishes lately and after experimenting with different combos this salad came to life. It’s so fresh and delicious and just a little bit different to your usual garden salad. The lime zest and juice and fresh herbs really make this one pop. I paired it with some grilled chicken and it was the bomb. Give it a go if you want to try something new! x
Edamame, avocado and radish salad
Serves 4 as a side
Time: 10 minutes
What you need:
1 cup edamame
1 small bunch radishes, thinly sliced
1 avocado, diced
1/2 cup mint leaves, chopped
2 tablespoons extra virgin olive olive
1 small lime, zest & juice
1 tablespoon sesame seeds
Salt & pepper
Optional: 1/2 avocado sliced on top (because it’s real pretty 🌸)
How to: combine all vegetable salad ingredients in a medium bowl. Make the dressing by combining extra virgin olive oil, lime juice and zest, salt and pepper in a jar, shake well to combine. Drizzle dressing over salad and top with a sprinkle of sesame seeds. Serve with extra fresh lime on the side.
