Green Goddess Pasta

This green goddess pasta is giving all the summery/spring vibes and it’s the perfect bowl to GLOW from the inside out. Packed with greens, healthy fats and slowly digesting carbs. It’s fresh, super delicious and ready in under 15 minutes! Enjoy the GLOW-UP!



Ingredients:

400g wholemeal fusilli pasta

Green sauce:

1 ripe avocado

2 cups tightly packed baby spinach

1 cup fresh basil

1/4 cup extra virgin olive oil

2 tablespoons nutritional yeast

Juice of 1 lemon

1 block regular or vegan feta

1/2 cup reserved pasta water

Sprinkle salt and pepper


Method:

Cook the pasta in a large pot of boiling water until al dente. Reserve 1/2 cup of the pasta water. In a large blender, add the green sauce ingredients and blitz until smooth. Combine the cooked pasta with the green sauce and toss to combine. Serve with extra basil on top. Enjoy!
