Hearty Minestrone
Makes 1 large pot (6 serves)
Ingredients:
1 onion, diced
2 cloves garlic, crushed
2 carrots, diced
2 ribs celery, diced
1 bunch baby broccolini, chopped
2 tablespoons extra virgin olive oil
2 cups soup mix - lentils, barley,
dried peas etc
4 cups chicken stock or broth
2-4 cups water
700g canned diced tomatoes
1 tsp oregano
2 bay leaves
Salt and pepper to taste
Method:
In a large pot, sauté the onion, garlic, carrot, celery and broccolini in olive oil until fragrant. Add the soup mix, stock, water, diced tomatoes, seasonings and bay leaves. Stir well to combine and simmer on low for 34-45 minutes or until lentils and barley are cooked through. Serve with a grilled cheese, enjoy!
