Some yummy salad inso is coming right at you guys with this roasted broccoli and black rice salad. This is full of crunchy textures and fresh flavours. It's a great way to fancy up your usual steamed broccoli and turn it into a delicious dish. I paired this with some grilled halloumi cheese and fresh lemon on top. Happy cooking guys x
Roasted broccoli and black rice salad recipe
Serves: 4
Time: 25-30 minutes (plus cooling time)
What you need:
2 cups black rice
1 cup parsley, chopped
1 cup mint leaves, chopped
2 heads of broccoli, chopped
3 tablespoons extra virgin olive oil
2 tablespoons pistachio nuts, chopped
1 lemon, juiced
Salt & pepper
Optional: serve with grilled halloumi & lemon wedges
How to: Pre-heat your oven to 180 degrees fan forced and line a large baking tray with baking paper. Cook black rice as per packet instructions, then set aside to cool. Chop up the broccoli and place on the baking tray with a tablespoon of extra virgin olive oil drizzled over the top, salt & pepper. Roast broccoli for 10 minutes, then remove the tray and turn broccoli over, roast for another 10 minutes then remove the tray and allow broccoli to cool. Meanwhile, chop up all of the fresh herbs and pistachio nuts and make the dressing by combining 2 tablespoons of extra virgin olive oil, lemon juice, salt & pepper. Once the broccoli and black rice has cooled, combine in a large bowl with the mint, parsley, pistachios and drizzle with the dressing, toss to combine.
