This shredded Mexican beef is juicy, tender and delicious! I love a slow cooker meal, just set and forget. It makes dinner time easy and you still get the full of flavour and tasty meal. Serve with your favourite toppings and enjoy!
Shredded Mexican Beef
Serves 6
1kg beef chuck steak
1 brown onion, sliced
4-5 cloves garlic (whole)
1/2 cup orange juice
1 cup beef broth or stock
Canned chipotle in adobo sauce
Juice of 1 lime
Handful of fresh coriander
1 tbs smoked paprika
1 tsp dried oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
Sprinkle salt and pepper
Optional: serve with rice or wraps, topped with guacamole, fresh salsa, shredded lettuce, coriander and lime
Season the beef with salt and pepper. In a slow cooker, sauté the onions and garlic until fragrant, then add the beef and cook until browned. Add the coriander, chipotle in adobe sauce, orange juice, stock, lime and seasonings. Cook on low for 8 hours. Remove the beef and onions, shred the beef with 2 forks and add a few spoonfuls of sauce. Serve with your favourite sides.
